Chef Alejandra Kauachi is proudly Mexican, a passionate cook, and dedicated to sharing the traditions and flavors of her ancestors.
Ale (as her friends call her) grew up in a family of Mexican and Lebanese cooks, growing up between spices and amazing aromas. When she had to choose a profession, culinary arts appeared as a natural choice.A professional chef, natural host, bon vivant and totally bohemian, she decided to share family stories, songs and recipes at the cooking school.

Chef Rosalía Chay has been passed down traditional Mayan customs and techniques from generations past. Chef Rosalía has been featured in Chef’s Table: BBQ on Netflix for her authentic and inspiring Maya cuisine.
Cooking the very best of Mayan food in her hometown Yaxunah in Yucatan, she invites us on an extraordinary journey immersed in her village, where she will show us her techniques and invite us to indulge our palates with exquisite Cochinita and Relleno Negro as we sit at the table amongst her family.

This has got to be one of the best experiences of my life!! Our host Alejandra was incredible and so full of knowledge and skill!! The recipes and tips (including the knife skills) will last a lifetime and I will pass along to my family. Then there is the food!!! What an absolute feast and delicious meal!! We will be back for sure!!

To get to experience the knowledge of traditional cooking Rosalia holds is a priceless experience, she makes you feel at home, the food is to die for and a well rounded experience all together. It is a bit far from Tulum but if you go to Chichen-Itza its already close to you and if Chichen-Itza is closed it is still worth it! There is also a Cenote a few blocks from Rosalia's house you can visit in the morning.
